How to Make Chili Chicken: A Flavorful Indo-Chinese Delicacy

 Chili Chicken is a popular Indo-Chinese dish made by stir-frying chicken pieces with a variety of sauces and spices. It has a combination of spicy, tangy, and savory flavors, and can be made dry or with gravy, depending on personal preference. Here's a simple recipe for making Chili Chicken:

Ingredients:

For the Chicken Marinade:

  • 500g boneless chicken (cut into bite-sized cubes)
  • 2 tablespoons cornflour (cornstarch)
  • 1 tablespoon all-purpose flour (maida)
  • 1 teaspoon soy sauce
  • 1 teaspoon vinegar
  • 1/2 teaspoon ginger-garlic paste
  • Salt to taste
  • A pinch of black pepper
  • 1 egg (optional)

For the Sauce:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 bell pepper, chopped (green/red)
  • 3-4 green chilies, slit (adjust to your spice preference)
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce (adjust for heat)
  • 1 tablespoon tomato ketchup
  • 1 tablespoon vinegar
  • 1/2 teaspoon sugar (optional)
  • Salt to taste
  • 1/4 cup water or chicken broth (for a gravy version)
  • Spring onions, for garnish

Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix chicken cubes with cornflour, all-purpose flour, soy sauce, vinegar, ginger-garlic paste, black pepper, and salt. Add an egg (optional) for extra binding.
    • Mix well, making sure the chicken is coated evenly. Let it marinate for 15-20 minutes.
  2. Fry the Chicken:

    • Heat oil in a frying pan or wok over medium heat.
    • Fry the marinated chicken in batches until golden brown and crispy. Remove and set aside.
  3. Prepare the Sauce:

    • In the same pan, add a little oil if needed. Stir-fry chopped onions, bell pepper, and green chilies until they soften but remain crisp.
    • Add the ginger-garlic paste and cook for 30 seconds until fragrant.
    • Stir in soy sauce, chili sauce, tomato ketchup, and vinegar. Mix well.
    • Add sugar (optional) and adjust salt. Add a bit of water or chicken broth if you prefer a gravy version.
  4. Combine Chicken with Sauce:

    • Add the fried chicken pieces to the sauce and toss them to coat evenly.
    • Stir-fry everything for another 2-3 minutes until the chicken absorbs the sauce and becomes well-coated.
    • Garnish with chopped spring onions.
  5. Serve:

    • Serve hot as a snack or with fried rice, noodles, or plain rice.
